Key responsibilities
- Assist the executive chef in managing the day-to-day operations of the kitchen
- Help develop and implement menus, recipes, and food preparation techniques
- Oversee the work of the sous chefs, line cooks, and other kitchen staff
- Ensure proper food handling, safety, and sanitation practices are followed
- Manage food inventory, order supplies, and control food costs
- Train and develop kitchen staff to improve skills and efficiency
- Troubleshoot any issues that arise in the kitchen and provide solutions
- Collaborate with the executive chef to optimize kitchen workflows and procedures
- Represent the executive chef in their absence and stand in as the head chef when needed
- Participate in menu planning, recipe development, and food cost analysis
- Maintain a high level of professionalism and lead by example for the kitchen team
The executive sous chef is typically the second-in-command in a restaurant's kitchen hierarchy,
reporting directly to the executive chef. They need extensive culinary knowledge, strong leadership
skills, and the ability to multitask in a fast-paced environment.
Desired candidate profile
Education and Experience:
- Minimum of 5-7 years of experience working in a professional kitchen as an executive sous
chef.
- Formal culinary training, such as a degree or diploma from a reputable culinary school
- Advanced knowledge of food preparation, cooking techniques, and kitchen operations
Technical Skills:
- Totally Recipe Based Chef with expertise in a wide variety of cuisines, cooking methods, and
recipe development and enforcement.
- Proficient in menu planning, costing, and inventory management
- Strong food safety and sanitation knowledge
- Skilled in utilizing commercial kitchen equipment and tools
Leadership and Management Skills:
- Ability to oversee and coordinate the work of kitchen staff effectively
- Strong verbal and written communication skills to interact with the kitchen team, executive
chef, and other stakeholders
- Problem-solving and decision-making abilities to address challenges in the kitchen
- Talent for training, developing, and motivating kitchen staff

- Flexible schedule and ability to work long, irregular hours, including evenings, weekends,
and holidays
- Creative and innovative mindset to contribute to menu and recipe development
- Excellent time management and multitasking skills
- Passion for the culinary arts and commitment to maintaining high-quality standards
